Simple Energy Snack


  • 200g cashew nuts

  • 120g dates

  • 1tsp coconut oil

  • Pinch of Himalayan salt (optional)

  • Pinch of Ceylon cinnamon

  • Pinch of cayenne pepper

  • 2 heaped tbsp cacao (this is optional for chocolate lovers)

  • 2tbsp desiccated coconut (optional)


Food processor


  • Place the cashew nuts in the food processor until it is finely ground

  • Add the salt, cinnamon, pepper and dates

  • Blend until the mixture becomes sticky (1 minute)

  • Add the coconut oil and blend for another minute

  • Add the cacao (optional)

  • Roll into small balls

  • Spread the desiccated coconut on a plate and roll the balls in it to coat them (optional)

  • Eat immediately or place in the refrigerator for up to
    5 days
