Sprouted Buckwheat Cereal

Ingredients

  • 80g buckwheat

  • 1tsp cacao nibs

  • 1tsp sunflower seeds

  • 1tsp flaxseeds

  • 1tsp goji berries

  • 1tbsp desiccated coconut

  • 200mg almond, coconut or oat milk

  • handful of blueberries

  • 1 small banana

Instructions

Preparation of the Buckwheat

  • Soak the buckwheat for 4 hours

  • Drain and rinse the buckwheat to remove excess water

  • Spread the buckwheat in a thin layer on a tray or plate and set aside for 24 hours to allow the germination process to start

  • Rinse and drain the buckwheat twice during the 24-hour germination period

  • As the buckwheat germinates, they will start sprouting

  • After the 24-hour period, rinse once more and dry them either in a dehydrator (up to 8 hours) or in the oven on very low heat (up to 4 hours) until they a dry and crunchy

  • Store in an airtight glass jar (they will keep for a month)

Preparation of the Cereal

  • Slice the banana

  • Place all the dry ingredients together in a bowl

  • Mix well

  • Serve with the plant-based milk
